Small cleanups and JSON to YAML conversion.

This is WIP work and not yet built nor tested.

Let me know if you're OK with the direction here.

Also, I have not found where the Fedora IoT images are built in Fedora infra so far as I might need to update the config to point it to the new manifest file.

Why do we need to move it to YAML? In F-36 we're aiming to move everything over to ImageBuilder process so I see this now as mostly as redundant change.

Oh, true, sorry I had forgotten about that. I'll keep it in JSON and update only the relevant parts then.
